Once the chefs have composed the dish, they prepare it - in pots, just like you would at home in your own kitchen, but on a larger scale. When the dish is cooked, it is cooled and freeze-dried. Freeze drying is an exciting process. The water or other solvent is removed by a process called sublimation. Sublimation occurs when the ice in a frozen product turns directly into a gaseous form without passing through the liquid phase.

After dehydration, the dishes are vacuumed. Vacuum packing makes the use of an oxygen absorber unnecessary, while still making it possible to see that the bag is sealed and tight as it should be. This is very important to ensure food safety. A bonus to this is that the packs become more compact and require less space in the backpack.

How is the food dried? Lyophilization is a process for extracting liquid (moisture) from a product. This is the most gentle way to remove water from food.
